Melt is a Zino Society 2011 Forum Finalist!

I don’t know about you, but I try to be as health-conscious as possible and limit the amount of saturated fat I eat.  Which, sadly, means almost never using butter.  But thanks to Meg Carlson and Prosperity Organic Foods, I can now use Melt, a butter substitute made of healthy fats and oils on everything!

Parmesan Potato Rounds

Ingredients:

4 Medium Red Potatoes, thinly sliced

1 Small Onion, thinly sliced and separated into rings

4 Tablespoon Melt, melted

1/4 Cup Parmesan Cheese, grated

1/4 Teaspoon Salt

1/8 Teaspoon Fresh Ground Black Pepper

1/8 Teaspoon Garlic Powder

Preparation:

1. Place half of the potatoes into a pre-greased, 2-quart baking dish.

2. Top with the onion slices and the rest of the potatoes.

3. Drizzle with Melt.

4. Sprinkle with the grated Parmesan cheese, salt, pepper and garlic powder.

5. Bake, uncovered at 450 degrees for 25 to 30 minutes or until the potatoes are golden brown and tender.

Culinary Herbs

Summer is a great season to grow herbs in the garden. If outside space isn’t available, indoor pots work well – a sunny windowsill can keep them growing year-round. Culinary herbs can be a rewarding and easy way to bring pizzazz to your cooking.

Oregano is a good herb for first time growers. Its distinctly sweet but robust taste is found in many
cuisines such as Italian, Mexican and Greek. The oregano plant is easy to grow with minimal care
requirements other than regular watering. Oregano likes to spread out, however, and take over
available growing space. Keep it in check by cutting it back before it flowers and drying the leaves and stems for your pantry. Herbs

Basil: There are several different varieties ranging from the slightly anise-flavored Thai basil to the
popular sweet basil. Basil is the primary ingredient in a traditional pesto sauce. Easy to start from seed in a warm, sunny spot, basil can produce its edible leaves year round if you pinch off flowers and don’t over water.

Rosemary is an evergreen that imparts a slight pine flavor to the food. Rosemary likes warm climates so if winters are harsh where you live, it’s best to bring it indoors and enjoy its scent through the winter. Rosemary is great for bread making. Create a loaf with a dusting of sea salt and rosemary, and then add a bit of Melt for that great butter substitute and you’ve got a satisfying treat.

What Flavors Work with Coconut?

People that haven’t tried Melt sometimes ask if it has a coconut flavor. It does, but it is mild and
pleasant. It is not strong like the taste of dried coconut. So even people that don’t like coconut tend to like Melt. Green Curry For those people that can taste the coconut flavor of Melt, there are a number of delicious and
interesting food pairings that can be made with coconut. Most Westerners think of coconut as a dessert and so they add foods like chocolate, pineapple, mango, and banana to coconut to get something sweet. But there are several other flavors that pair well with a coconut oil diet.

The cuisines of South-East Asia and India have come up with creative ways of using coconut
milk. In fact, in large parts of Asia, the word curry almost always refers to vegetables and meats cooked with spices in a coconut milk base. Some of the flavors these cuisines pair with coconut can be as varied as lime leaves, cilantro, cumin, cinnamon and garlic!

For those new to using virgin coconut oil in savory cooking, the flavors of Thailand might be a
good first step for experimentation. Most large grocery stores carry ready-made curry pastes that can be mixed into coconut milk.
