Melt is a Zino Society 2011 Forum Finalist!

I don’t know about you, but I try to be as health-conscious as possible and limit the amount of saturated fat I eat.  Which, sadly, means almost never using butter.  But thanks to Meg Carlson and Prosperity Organic Foods, I can now use Melt, a butter substitute made of healthy fats and oils on everything!

Hello! This is Cygnia, Founder of Prosperity Organic Foods and the Creator of Melt®– our luscious healthy substitute to butter made with organic virgin coconut oil and other healthy organic oils. I originally created Melt® for myself when I was on a restricted diet from several digestive disorders and needed a way to enjoy my food again. I love to cook and I love eating even more, but my restricted diet cut out the sources of fat and protein I needed to sustain me throughout the day. I began researching healthy options for flavor and satiety and discovered healthy fats not only make food taste better, they are essential for proper nutrition and gut health. What Flavors Work with Coconut?

People that haven’t tried Melt sometimes ask if it has a coconut flavor. It does, but it is mild and
pleasant. It is not strong like the taste of dried coconut. So even people that don’t like coconut tend to like Melt. Melt also has a small amount of butter fat in it to give it that satisfying flavor of fresh butter. Melt tastes like butter mixed with a hint of coconut. In other words, it’s absolutely delicious!

Green Curry For those people that can taste the coconut flavor of Melt, there are a number of delicious and
interesting food pairings that can be made with coconut. Most Westerners think of coconut as a dessert and so they add foods like chocolate, pineapple, mango, and banana to coconut to get something sweet. But there are several other flavors that pair well with a coconut oil diet.

The cuisines of South-East Asia and India have come up with creative ways of using coconut
milk. In fact, in large parts of Asia, the word curry almost always refers to vegetables and meats cooked with spices in a coconut milk base. Some of the flavors these cuisines pair with coconut can be as varied as lime leaves, cilantro, cumin, cinnamon and garlic!

For those new to using virgin coconut oil in savory cooking, the flavors of Thailand might be a
good first step for experimentation. Most large grocery stores carry ready-made curry pastes that can be mixed into coconut milk. Sautee your vegetables and meat in Melt along with the curry paste to up the coconut flavor before adding the milk. There has been a proliferation of websites popping up claiming that virgin coconut oil is the next
panacea or “cure-all” for everything from thyroid disease to coarse body hair. These sites are typically run by companies looking to sell jars of coconut oil over the internet to consumers that are wooed by their often false or misinterpreted statistics and claims about the benefits of a coconut oil diet.

Often time the doctors and experts on these sites are paid by the companies directly for endorsements. Some of the websites out there recommend eating four or more tablespoons of organic virgin coconut oil a day! Consumers need to keep in mind that coconut oil has more saturated fat than both butter and lard. Would you eat that much butter or lard every day by the spoonful? I would hope not. Spoon in Mouth

Here is some straight talk. Organic Virgin coconut oil won’t make you lose thirty pounds without exercising, all the while clearing your complexion, paying your bills and nabbing the partner of your dreams. It is not the cure for all things. Nothing is.

But it can do some great things for metabolism and weight loss when combined with a low-
carbohydrate diet, exercise and adequate protein consumption. The key to all healthy living is everything in moderation. Use Melt in your daily cooking and baking, but don’t eat it out of the container like ice cream! Swapping out Melt for margarine or butter is only one step to a better, healthier way of living.

Healthy Grilling: A Way to Beat the Burn

Burned Corn Summer is finally underway, full of warm evenings and outdoor fun.   Foodies and men that otherwise never touch a spatula are heading outdoors to fire up the grill.  But beware the charred burgers and blackened fish.  Cooking food on the grill can add up to some serious concerns about carcinogens.

Luckily there are some ways to cut unhealthy chemicals out of the party when you turn on the grill.  Choose smaller cuts of meat to reduce cooking time.  Pick less fatty meats, because lean meats don’t drip as much fat, causing less carcinogenic build-up on your meal.  Clean your grill rack regularly to avoid caked-on charred residue and try placing a layer of aluminum foil between your food and the rack, poking holes in it to let juices flow down, but keeping the bulk of your meat free from blackening.

Instead of grilling your veggies, which when charred can be as unhealthy as well-done meats, steam them inside and give them a dollop of Melt for some coconut oil health benefits.  You and your family and friends will get less exposure to cancer-causing substances and more good stuff, like omega-3’s.

Ann Harding of Health.com writes, "Eating fat can be heart-healthy if you pick the right kind of fat." She continues with providing an overview of the fats to limit (Saturated fats, Cholesterol), eliminate (Trans fat), and get more of (Unsaturated fats, Polyunsaturated fats, Omega-3 fatty acids).

A recent Supermarket News article reported that 96% of shoppers surveyed believe they are more healthy today than they were a year ago.  The primary motivation for making healthier choices is cited as "preventative care" followed by "losing weight".

Substitutes for Butter

FITDAY recently published an overview of substitutes for butter, and included mention of Melt Buttery Spread's main ingredient — virgin coconut oil:
