Meditate to Better Health

Part of healthy living means keeping the brain happy and fine-tuned.  As we age, our brains slow unless we keep them active and busy with learning new information and tasks. Parmesan Potato Rounds

Ingredients:

4 Medium Red Potatoes, thinly sliced

1 Small Onion, thinly sliced and separated into rings

4 Tablespoon Melt, melted

1/4 Cup Parmesan Cheese, grated

1/4 Teaspoon Salt

1/8 Teaspoon Fresh Ground Black Pepper

1/8 Teaspoon Garlic Powder

Preparation:

1. Place half of the potatoes into a pre-greased, 2-quart baking dish.

2. Top with the onion slices and the rest of the potatoes.

3. Drizzle with Melt.

4. Sprinkle with the grated Parmesan cheese, salt, pepper and garlic powder.

5. Bake, uncovered at 450 degrees for 25 to 30 minutes or until the potatoes are golden brown and tender.

Coupons Craze

Remember the days of Supermarket Sweep? Watching other people grocery shop was entertainment: Those times are back. The TLC network has a new show called “Extreme Couponing” where the people profiled, pay very low, out-of-pocket costs after using coupons in excess to whittle down the price of food and other goods.

The trend of extreme coupon use prompted by media and the new reality show is making life more complex for some coupon users. Newspapers are tightening restrictions on how coupon inserts are used and they are seeing increased complaints as people steal newspapers to get at the coupons inside.

For real savers, there’s a popular service online (http://thecouponclippers.com) that promises to gather coupons and do all the cutting out of the papers for them.

And as far as healthy eating, healthy butter and organics are concerned, coupons are also available through natural and organic markets (like Whole Foods and your local Co-op), as well as through large retailers who are expanding their organic offerings (think Target, Fred Meyer for example).

Culinary Herbs

Summer is a great season to grow herbs in the garden. If outside space isn’t available, indoor pots work well – a sunny windowsill can keep them growing year-round. Culinary herbs can be a rewarding and easy way to bring pizzazz to your cooking.

Oregano is a good herb for first time growers. Its distinctly sweet but robust taste is found in many
cuisines such as Italian, Mexican and Greek. The oregano plant is easy to grow with minimal care
requirements other than regular watering. Oregano likes to spread out, however, and take over
available growing space. Keep it in check by cutting it back before it flowers and drying the leaves and stems for your pantry. Herbs

Basil: There are several different varieties ranging from the slightly anise-flavored Thai basil to the
popular sweet basil. Basil is the primary ingredient in a traditional pesto sauce. Easy to start from seed in a warm, sunny spot, basil can produce its edible leaves year round if you pinch off flowers and don’t over water.

Rosemary is an evergreen that imparts a slight pine flavor to the food. Rosemary likes warm climates so if winters are harsh where you live, it’s best to bring it indoors and enjoy its scent through the winter. Rosemary is great for bread making.
